Black-Eyed Pea Gumbo

Ingredients

  • 4 cups black-eyed peas
  • 1/2 pound salt pork
  • 1 cup onions, chopped
  • 1 cup chopped celery
  • 1 cup chopped bell pepper
  • 1 clove garlic
  • 1/2 pound okra, cut up
  • 4 cups or 2 cans tomatoes
  • 2 cans Ro*Tel tomatoes
  • 1 pound popcorn shrimp*
  • 3 tablespoons margarine
  • Salt and pepper to taste

Instructions

  1. Soak peas overnight.
  2. Add salt pork; start cooking.
  3. Sauté onions, celery, bell pepper and garlic.
  4. Add to peas with shrimp.
  5. Add both the regular canned tomatoes and the Ro*Tel, and simmer until done.

* Substitute with your favorite meat, thinly sliced chicken, round steak or hamburger meat.
