Black-Eyed Pea Gumbo
Ingredients
- 4 cups black-eyed peas
- 1/2 pound salt pork
- 1 cup onions, chopped
- 1 cup chopped celery
- 1 cup chopped bell pepper
- 1 clove garlic
- 1/2 pound okra, cut up
- 4 cups or 2 cans tomatoes
- 2 cans Ro*Tel tomatoes
- 1 pound popcorn shrimp*
- 3 tablespoons margarine
- Salt and pepper to taste
Instructions
- Soak peas overnight.
- Add salt pork; start cooking.
- Sauté onions, celery, bell pepper and garlic.
- Add to peas with shrimp.
- Add both the regular canned tomatoes and the Ro*Tel, and simmer until done.
* Substitute with your favorite meat, thinly sliced chicken, round steak or hamburger
meat.
