Blue Bayou Jambalaya



  1. In large skillet; sauté onion, green pepper, clove garlic and rice in butter until onion is transparent.
  2. Stir in ketchup and remaining ingredients, except shrimp; cover. Simmer for 25 to 30 minutes or until rice is tender.
  3. Add shrimp; continue to simmer, tossing mixture gently with a fork until shrimp is tender, about 5 minutes.

Yield: 4 to 6 servings
