Cajun Cornbread

Ingredients

  • 2 large eggs
  • 1 cup buttermilk
  • 1 cup corn oil
  • 1 3/4 cup yellow corn meal
  • 1 tablespoon baking powder
  • 1/2 teaspoon baking soda
  • 1 teaspoon salt
  • 1 teaspoon cayenne pepper
  • 3/4 cup grated sharp Cheddar cheese
  • 1/4 cup chopped jalapeño pepper
  • 1/4 cup chopped pimento
  • 1/2 cup chopped yellow onion
  • 1 (10 ounce) can creamed corn

Instructions

  1. Beat eggs, buttermilk and corn oil in a large mixing bowl and stir in all the remaining ingredients.
  2. Blend thoroughly, then pour into a well-greased preheated cast iron skillet and bake at 350 degrees F for 25 to 30 minutes.
