Cajun Hush Puppies
This is a recipe originating in the South Louisiana Bayou Country.
- 1 1/2 cups cornmeal
- 1/2 cup flour
- 1 teaspoon baking powder
- 1/2 teaspoon
- 1 teaspoon salt
- 1 egg
- 1 onion, chopped
- 1 cup buttermilk
- 1 large jalapeno pepper, finely chopped (optional)
- Mix all ingredients.
- Drop with a large spoon into HOT oil in a deep fat fryer. Cook until golden
brown, turning with a long wooden spoon.
