Cajun Okra Stew

Ingredients
- 6 or 7 fresh large tomatoes
- 1 can lima beans
- 1 can black-eyed peas
- 1 cup fresh okra, chopped
- 1 onion, chopped
- 2 or 3 cloves garlic, chopped
- 1 tablespoon Cajun seasoning
- Salt and pepper, to taste
- 1 to 2 teaspoons olive oil
Instructions
- Heat olive oil in a large pot.
- Add chopped onions and garlic and saute for 2 to 3 minutes.
- Add chopped tomatoes, lima beans, black-eyed peas and Cajun seasoning.
- Bring to a boil, stir well, then reduce heat and simmer over low heat for 30 minutes, stirring occasionally. If the stew gets too thick add water as needed.
- Add chopped okra and stir well. Simmer for another 15 minutes.
- Serve over brown rice.
