Cajun Okra Stew

Ingredients

  • 6 or 7 fresh large tomatoes
  • 1 can lima beans
  • 1 can black-eyed peas
  • 1 cup fresh okra, chopped
  • 1 onion, chopped
  • 2 or 3 cloves garlic, chopped
  • 1 tablespoon Cajun seasoning
  • Salt and pepper, to taste
  • 1 to 2 teaspoons olive oil

Instructions

  1. Heat olive oil in a large pot.
  2. Add chopped onions and garlic and saute for 2 to 3 minutes.
  3. Add chopped tomatoes, lima beans, black-eyed peas and Cajun seasoning.
  4. Bring to a boil, stir well, then reduce heat and simmer over low heat for 30 minutes, stirring occasionally. If the stew gets too thick add water as needed.
  5. Add chopped okra and stir well. Simmer for another 15 minutes.
  6. Serve over brown rice.
