Crawfish and Grits Casserole


  • 1 cup quick grits
  • 3 cups water
  • 2 teaspoons extra-virgin olive oil
  • 1 cup chopped onions
  • 3 cloves garlic, chopped
  • 2 cups crawfish tails, cooked
  • 1/4 cup green onions, chopped
  • 1/4 cup parsley, chopped
  • 1 cup Cheddar cheese, shredded
  • 3 large eggs, beaten
  • 1/4 teaspoon salt
  • 1/2 teaspoon Cajun Seasoning


  1. Cook grits as per instructions on box and set aside.
  2. In a skillet, sauté onions and garlic in olive oil until onions are clear.
  3. Add crawfish and sauté another 5 minutes.
  4. Add crawfish mixture to the grits and add eggs, cheese, Cajun seasoning , salt, green onions and parsley and mix well.
  5. Place mixture in a 13 x 9-inch baking dish and bake at 350 degrees F for 20 minutes.
