Crawfish Mac and Cheese

Crawfish Mac and Cheese recipe

Yield: 10 (2/3 cup) servings

Ingredients

  • 8 ounces elbow macaroni or spirals
  • 2 tablespoons cornstarch
  • 2 cups milk
  • 6 slices American cheese
  • 1 cup shredded Cheddar cheese
  • Salt and pepper to taste
  • 1 cup Louisiana crawfish tails, rinsed and drained
  • Panko crumbs (optional)

Instructions

  1. Cook macaroni according to package directions. Drain well and set aside.
  2. In large nonstick pot, mix cornstarch and milk; bring to a boil. Lower heat, stirring, and cook until thickened, about 5 minutes.
  3. Reduce heat and add American cheese and Cheddar cheese, stirring until melted.
  4. Add macaroni and crawfish; mixing well. Season to taste.
  5. If desired, sprinkle the top with panko crumbs and put under the broiler for about a minute to toast.
