Crawfish Mac and Cheese
Yield: 10 (2/3 cup) servings
Ingredients
- 8 ounces elbow macaroni or spirals
- 2 tablespoons cornstarch
- 2 cups milk
- 6 slices American cheese
- 1 cup shredded Cheddar cheese
- Salt and pepper to taste
- 1 cup Louisiana crawfish tails, rinsed and drained
- Panko crumbs (optional)
Instructions
- Cook macaroni according to package directions. Drain well and set aside.
- In large nonstick pot, mix cornstarch and milk; bring to a boil. Lower heat, stirring, and cook until thickened, about 5 minutes.
- Reduce heat and add American cheese and Cheddar cheese, stirring until melted.
- Add macaroni and crawfish; mixing well. Season to taste.
- If desired, sprinkle the top with panko crumbs and put under the broiler for about a minute to toast.
