Home Style Gumbo

Ingredients

  • 1 teaspoon oil
  • 1 cup chopped onions
  • 1 cup chopped celery
  • 1 medium green bell pepper, chopped
  • 2 garlic cloves, minced
  • 1/2 pound boneless pork loin, cut into thin strips
  • 2 1/2 cups chicken broth
  • 1/2 teaspoon dried thyme leaves
  • 1/2 teaspoon dried basil leaves
  • 1/2 to 1 teaspoon hot pepper sauce
  • 1 (14.5 ounce) can diced tomatoes, undrained
  • 1 cup uncooked instant rice
  • 1 (12 ounce) package frozen shelled deveined cooked shrimp, thawed

Instructions

  1. Heat oil in Dutch oven over medium-high heat until hot.
  2. Add onions, celery, bell pepper and garlic; cook and stir 5 minutes.
  3. Add pork; cook for 2 to 3 minutes or until no longer pink.
  4. Add broth, thyme, basil, hot pepper sauce and tomatoes; mix well. Bring to a boil. Stir in rice and shrimp.
  5. Remove from heat; cover and let stand for 5 minutes or until shrimp are hot.

Notes

If desired, serve with additional hot pepper sauce.
