Turkey Carcass Gumbo

Yield: 6 to 8 servings

Ingredients

  • Turkey carcass
  • Water
  • 1/2 cup all-purpose flour
  • 2 onions, chopped
  • 3 cloves garlic, minced
  • 1 green bell pepper, chopped
  • 2 stalks celery, chopped
  • 2 quarts turkey broth
  • Salt and pepper, to taste
  • Tabasco sauce
  • 2 bay leaves
  • 1 teaspoon dried basil
  • 1 tablespoon dried parsley
  • 2 cups chopped turkey
  • 1 pound smoked sausage (cut bite-size)
  • Green onion tops

Instructions

  1. After the turkey has been carved, put bones in plenty of water and boil slowly about 1 1/2 hours or until remaining meat falls off the bones.
  2. Make a roux of bacon drippings and flour. Add onions, garlic, bell pepper, dash of Tabasco sauce, bay leaves, basil and parsley. Cook for 1 hour.
  3. Add turkey and sausage and cook for about 15 minutes longer. Add green onions and cook a few minutes longer.
  4. Serve over hot, cooked rice.
