Fried Okra and Potatoes
1 pound fresh okra, diced small
1 large onion, chopped
1 small bag Martha White Cornbread Mix
1 or 2 green tomatoes, diced
4 or 5 medium potatoes, diced
Everything should be diced approximately the same size.
Mix in a bowl with the cornbread mix and set stand for about 15 minutes.
Fry in a covered skillet until the potatoes are tender, then uncover to brown.
Drain on paper towels and serve.
