Fried Okra and Potatoes
- 1 pound fresh okra, diced small
- 1 large onion, chopped
- 1 small bag Martha White Cornbread Mix
- 1 or 2 green tomatoes, diced
- 4 or 5 medium potatoes, diced
- Everything should be diced approximately the same size.
- Mix in a bowl with the cornbread mix and set stand for about 15 minutes.
- Fry in a covered skillet until the potatoes are tender, then uncover to brown.
- Drain on paper towels and serve.
