Fried Okra and Potatoes

Ingredients

  • 1 pound fresh okra, diced small
  • 1 large onion, chopped
  • 1 small bag Martha White Cornbread Mix
  • 1 or 2 green tomatoes, diced
  • 4 or 5 medium potatoes, diced

Instructions

  1. Everything should be diced approximately the same size.
  2. Mix in a bowl with the cornbread mix and set stand for about 15 minutes.
  3. Fry in a covered skillet until the potatoes are tender, then uncover to brown.
  4. Drain on paper towels and serve.
