Southern Potato Salad



  • 8 large potatoes
  • 1 cup mayonnaise
  • 8 boiled eggs
  • 2 cups diced onion
  • 2 tablespoons mustard
  • 1 pound bacon, diced and fried
  • 2 cups diced celery
  • 4 tablespoons relish
  • 2 teaspoons salt


  1. Peel and dice potatoes into bite-size pieces. Boil in large pot until desired doneness is reached.
  2. Drain and let cool.
  3. After potatoes are cooled, mix all ingredients in a large bowl.
  4. Adjust mayonnaise, mustard and spices to taste.
  5. Refrigerate until cool.
