Southern Shrimp and Grits

Southern Shrimp and Grits is a cheesy delight, and the bacon and green onions add a ton of flavor!

Southern Shrimp and Grits

Yield: 4 servings

Ingredients

  • 2 slices bacon, chopped
  • 3 cups water
  • 1/2 teaspoon salt
  • 3/4 cup instant grits
  • 1 cup shredded Cheddar cheese
  • 1 pound medium shrimp, peeled, deveined
  • 4 green onions, thinly sliced (about 1/3 cup)
  • 1 clove garlic, minced
  • 2 tablespoons chopped parsley
  • 1 tablespoon lemon juice

Instructions

  1. Cook bacon in large skillet over medium-heat heat until crisp.
  2. Drain on paper towels; set aside.
  3. Bring water and salt to boil in medium saucepan.
  4. Slowly stir in grits. Reduce heat to medium-low; cover. Cook for 7 minutes or until thickened. Stir in cheese; set aside.
  5. Add shrimp, onions and garlic to skillet; cook and stir 3 minutes or until shrimp turn pink.
  6. Add bacon, parsley and lemon juice; mix well.
  7. Serve shrimp mixture over grits.
  8. Serve with a mixed green salad.
