Muddy Rice

Yield: 10 to 12 servings

Ingredients

  • 4 cups rice
  • 3/4 cup (1 1/2 sticks) butter
  • 1/2 cup soy sauce
  • 4 stalks celery
  • 3 bunches green onions
  • 1 pound fresh mushrooms
  • 1 small can chopped ripe olives

Instructions

  1. Cook rice and set aside.
  2. Place butter and soy sauce into a large stir fry skillet and melt.
  3. Add vegetables and simmer until tender.
  4. Remove from heat, add rice and mix well.
  5. Add additional soy sauce if desired.
