Orange Curried Rice
- 1/2 cup chopped onions
- 1/4 cup butter
- 2 teaspoons curry powder
- 1 cup uncooked rice
- 1 cup orange juice
- 1 cup chicken broth
- 1 teaspoon salt
- 1 bay leaf
- In a heavy saucepan sauté the onions in butter until soft.
- Stir in the curry powder and rice; cook and stir two minutes.
- Add remaining ingredients and stir with
a fork. Bring to a boil, lower the heat, cover and simmer for 20 minutes.
- Remove bay leaf before serving.
