Green Velvet Cake

Ingredients

Cake

  • 2 eggs, beaten
  • 1 1/2 cups granulated sugar
  • 1 1/4 cups vegetable oil
  • 1 teaspoon vinegar
  • 2 1/2 cups self-rising flour
  • 1 teaspoon baking soda
  • 1 cup buttermilk
  • 1 teaspoon vanilla extract
  • Green food coloring

White Icing

  • 1 box confectioners' sugar
  • 2 tablespoons butter
  • 8 ounces cream cheese

Instructions

  1. Cake: Combine eggs, sugar, oil and vinegar in bowl; mix well.
  2. Sift flour and baking soda together. Add to egg mixture alternately with buttermilk, beating well after each addition. Add vanilla extract and food coloring; mix well. Pour batter into 3 greased and floured 8-inch cake pans.
  3. Bake at 350 degrees F for 25 minutes, cool.
  4. Frost with White Icing.
  5. White Icing: Mix all ingredients together well.
