Coconut Strawberry Salad
An easy to prepare strawberry fruit salad with the taste of the tropics.
Yield: 6 to 8 servings
Ingredients
- 1 quart strawberries, hulled and quartered
- Granulated sugar to taste
- 1 (20 ounce) can pineapple chunks, drained
- 1 cup flaked sweetened coconut
- 2/3 cup orange juice
Instructions
- Cut the strawberries into quarters and sprinkle them with sugar. Stir to coat and allow to macerate for 30 minutes to one hour.
- In a glass bowl, mix together strawberries, pineapple, and coconut.
- Drizzle orange juice over and stir to mix.
- Refrigerate for at least one hour before serving.
- Serve cold.
