Marshmallow Carrot Salad
Ingredients
- 3 1/2 cups shredded carrots
- 1 cup miniature marshmallows
- 1/4 cup crushed pineapple, well drained
- 1 cup seedless raisins
- 1/2 cup shredded coconut
- 1 cup mayonnaise
- 1 cup whipped cream or frozen topping, thawed
Instructions
- Peel carrots. Shred with a coarse shredder into a mixing bowl.
- Add marshmallows, pineapple, raisins and coconut. Toss lightly to mix.
- Combine mayonnaise with the carrot mixture.
- Carefully fold in the whipped cream.
- Serve in crisp lettuce cups, garnished with additional coconut, if desired.
