Marshmallow Carrot Salad



3 1/2 cups shredded carrots

1 cup miniature marshmallows

1/4 cup crushed pineapple, well drained

1 cup seedless raisins

1/2 cup shredded coconut

1 cup mayonnaise

1 cup whipped cream or frozen topping, thawed


Peel carrots. Shred with a coarse shredder into a mixing bowl. Add marshmallows, pineapple, raisins and coconut. Toss lightly to mix.

Combine mayonnaise with the carrot mixture. Carefully fold in the whipped cream.

Serve in crisp lettuce cups, garnished with additional coconut, if desired.
