Orange Pecan Tapioca Salad

Yield: 6 servings

Ingredients

  • 1 box vanilla cook and serve pudding mix
  • 3 tablespoons quick cooking tapioca
  • 2 cups skim milk
  • 1 box sugar free orange jello
  • 3/4 cup Cool Whip Lite
  • 1 cup mandarin oranges, drained
  • 3 tablespoons chopped pecans

Instructions

  1. In a large saucepan, combine dry pudding, tapioca, milk and gelatin. Mix well using wire whisk, then let set 5 minutes.
  2. Cook over medium heat, stirring constantly, until mixture thickens and starts to boil.
  3. Pour into a large bowl and place bowl on a wire rack. Cool for 30 minutes.
  4. Add Cool Whip, orange and pecans; mix gently to combine.
  5. Cover and refrigerate for at least 15 minutes.
