Pasta and Black Walnut Fruit Salad

Pasta and Black Walnut Fruit Salad

Yield: 6 to 8 servings

Ingredients

  • 8 ounces medium pasta shells: Rotini, bow tie or other shape, uncooked
  • 1 cup nonfat plain yogurt
  • 1 tablespoon honey
  • 1/4 cup frozen orange juice concentrate, thawed
  • 1 (11 ounce) can juice-packed mandarin oranges, drained
  • 1 cup seedless red grapes, cut into halves
  • 1 cup seedless green grapes, cut into halves
  • 1 apple, cored and chopped
  • 1/2 cup sliced celery
  • 1/2 to 3/4 cup American Black Walnuts

Instructions

  1. Prepare pasta according to package directions; drain and cool.
  2. In a small bowl, blend yogurt, honey and orange juice concentrate.
  3. In a large bowl, combine pasta, and remaining ingredients, except mandarin oranges.
  4. Add yogurt mixture; toss to coat.
  5. Add mandarin oranges and gently toss again.
  6. Cover and chill thoroughly.
