Peaches replace tomatoes in this layered fresh mozzarella Italian- influenced salad. Your family will be delighted with the flavor switch. Drizzle with olive oil or make the quick peach vinaigrette.
2 cans (15 oz. each) Del Monte® Lite Peach Halves
8 ounces fresh mozzarella, cut into 8 slices
8 large fresh basil leaves
1 teaspoon olive oil
Sea salt and freshly cracked black pepper, to taste
Drain peaches, reserving syrup from one can to make vinaigrette, if desired.
Slice peaches by placing peach halves cut-side-down on a cutting board. Place a hand gently on top of peach and cut across horizontally.
Cut small peach halves into 2 slices, and large peach halves into 3 slices.
Arrange peach slices, mozzarella slices and basil leaves alternately on 4 individual salad plates.
Top each salad with a drizzle of olive oil and a light sprinkling of salt and pepper, or Peach Vinaigrette (recipe below).
Peach Vinaigrette: Whisk together reserved peach syrup (approximately 1/2 cup), 1 tablespoon white wine vinegar, 1 teaspoon olive oil and 1 teaspoon Dijon mustard. Season to taste with sea salt and black pepper, if desired.
