Peach-Cottage Cheese Loaf
Yield: 18 servings
Ingredients
- 1 (30 ounce) can peaches, sliced and diced
- 2 envelopes plain gelatine
- 2 cups cottage cheese
- 1 tablespoon sugar
- 2 tablespoons lemon juice
- 1 cup chopped nuts
- 1 teaspoon grated lemon rind
- 1 cup sour cream
- 1 cup finely chopped celery
- 3/4 cup mayonnaise
Instructions
- Drain syrup from peaches and use to soften gelatin. Dissolve over hot water.
- Beat cottage cheese, mayonnaise and sugar.
- Add diced peaches, lemon rind, juice and sour cream, nuts and celery.
- Pour into a loaf pan and chill until firm, then turn out and slice.
