Peach-Cottage Cheese Loaf



1 (30 ounce) can peaches, sliced and diced

2 envelopes plain gelatine

2 cups cottage cheese

1 tablespoon sugar

2 tablespoons lemon juice

1 cup chopped nuts

1 teaspoon grated lemon rind

1 cup sour cream

1 cup finely chopped celery

3/4 cup mayonnaise


Drain syrup from peaches and use to soften gelatin. Dissolve over hot water.

Beat cottage cheese, mayonnaise and sugar. Add diced peaches, lemon rind, juice and sour cream, nuts and celery. Pour into a loaf pan and chill until firm, then turn out and slice.

Makes 18 servings
