Salad and Salad Dressing Recipes
Pineapple-Jicama Toss
Yield: 8 servings
Ingredients
Salad
- 6 cups bite size pieces mixed salad greens
- 1 cup diced fresh pineapple
- 1 cup finely shredded Napa cabbage (optional)
- 3/4 cup jicama, peeled and finely diced
- 2 kiwi, peeled and cut lengthwise in half and sliced
Dressing
- 2 tablespoons vegetable oil
- 2 tablespoons honey
- 2 tablespoons orange juice
- 1 tablespoon seasoned rice vinegar
- 1 teaspoon poppy seeds
- 2 teaspoons Dijon mustard
Instructions
- In a large bowl, combine the salad greens, pineapple, cabbage, if using, jicama and kiwi.
- In a jar with a lid, add the oil, honey, orange juice, rice vinegar, poppy seeds and mustard. Cover with the lid and shake until well-blended. Toss dressing with ingredients in bowl.
