Pineapple-Jicama Toss

Ingredients

Salad

  • 6 cups bite size pieces mixed salad greens
  • 1 cup diced fresh pineapple
  • 1 cup finely shredded Napa cabbage (optional)
  • 3/4 cup jicama, peeled and finely diced
  • 2 kiwi, peeled and cut lengthwise in half and sliced

Dressing

  • 2 tablespoons vegetable oil
  • 2 tablespoons honey
  • 2 tablespoons orange juice
  • 1 tablespoon seasoned rice vinegar
  • 1 teaspoon poppy seeds
  • 2 teaspoons Dijon mustard

Instructions

  1. In a large bowl, combine the salad greens, pineapple, cabbage, if using, jicama and kiwi.
  2. In a jar with a lid, add the oil, honey, orange juice, rice vinegar, poppy seeds and mustard. Cover with the lid and shake until well-blended. Toss dressing with ingredients in bowl.
