Pineapple-Jicama Toss




6 cups bite-size pieces mixed salad greens

1 cup diced fresh pineapple

1 cup finely shredded Napa cabbage (optional)

3/4 cup jicama, peeled and finely diced

2 kiwi, peeled and cut lengthwise in half and sliced


2 tablespoons vegetable oil

2 tablespoons honey

2 tablespoons orange juice

1 tablespoon seasoned rice vinegar

1 teaspoon poppy seeds

2 teaspoons Dijon mustard


Salad: In a large bowl, combine the salad greens, pineapple, cabbage, if using, jicama and kiwi.

Dressing: In a jar with a lid, add the oil, honey, orange juice, rice vinegar, poppy seeds and mustard. Cover with the lid and shake until well-blended. Toss dressing with ingredients in bowl.

Serves 8.
