Beet Mold

Ingredients

  • 1 (16 ounce) can shoestring beets
  • 1 small box lemon gelatin
  • 3 tablespoons vinegar
  • 1/2 teaspoon salt
  • 1/2 cup grated cucumber
  • 3 tablespoons grated onion

Instructions

  1. Drain beets; reserve juice.
  2. Heat juice with enough water to make 1 cup.
  3. Dissolve gelatin in hot liquid.
  4. Combine all ingredients.
  5. Pour into oiled mold and chill until firm.
