Lime Ambrosia Salad

Ingredients

  • 2 small boxes lime gelatin
  • 2 cups boiling water
  • 2 (8.25 ounce) cans crushed pineapple in syrup
  • 1/2 cup cold water
  • 2/3 cup evaporated milk
  • 1/2 cup miniature marshmallows
  • 1/2 cup flaked coconut

Instructions

  1. Dissolve gelatin in boiling water.
  2. Stir in pineapple with syrup and cold water.
  3. Chill until mixture mounds from a spoon.
  4. Stir in evaporated milk, marshmallows and coconut.
  5. Pour into a 6-cup mold.
  6. Chill until firm.
  7. Unmold onto lettuce leaves.
