Ozark Blueberry Salad

Ingredients

• 2 (3 ounce) boxes raspberry gelatin
• 2 cups boiling water
• 1 1/2 cups cold water
• 1 (8 ounce) can crushed pineapple with juice
• 1 1/2 cups blueberries or 1 (15 ounce) can, drained or frozen blueberries
• 1 (8 ounce) package cream cheese, softened
• 1 cup sour cream
• 1/2 cup granulated sugar
• 1/2 teaspoon vanilla extract
• 2 cups chopped pecans or walnuts

Instructions

1. Mix gelatin and boiling water well in a large bowl, add cold water.
2. Add pineapple and blueberries and pour into an 8 x 11 glass dish or pan.
3. Refrigerate until set.
4. Mix cream cheese, sour cream, sugar and vanilla extract until smooth and spread over gelatin mixture.
5. Sprinkle pecans or walnuts over the top.
