Chicken Gazpacho Salad

Ingredients

  • 1 (14 ounce) package uncooked fusilli pasta
  • 2 cups cubed cooked chicken
  • 1 cup chopped cucumber (about 1 small)
  • 1 cup chopped yellow or red bell pepper (about 1 medium)
  • 1 cup chopped tomato (about 1 large)
  • 3/4 cup spicy V-8 juice
  • 1/4 cup lemon juice
  • 1/2 teaspoon pepper
  • 1/4 teaspoon salt
  • 1 clove garlic, finely chopped

Instructions

  1. Cook pasta as directed on package; drain.
  2. Mix pasta and remaining ingredients.
  3. Serve immediately.
