Smoked Salmon Pasta Salad
Yield: 4 main dish servings
Ingredients
- 2 1/2 cups medium shell macaroni
- 1/4 cup lemon juice
- 3 tablespoons snipped fresh dill weed
- 4 teaspoons Dijon-style mustard
- 2 teaspoons granulated sugar
- 1/4 teaspoon salt
- 1/8 teaspoon pepper
- 3 tablespoons peanut oil
- 6 ounces skinned, boned and flaked hot smoked salmon
- 1/2 cup coarsely chopped cucumber
- 1/4 cup snipped fresh chives
Instructions
- Cook pasta according to package directions. Drain, then rinse with cold water, and drain well. Return to saucepan; set aside.
- In a small bowl whisk together the lemon juice, dill weed, mustard, sugar, salt and pepper.
- Slowly add peanut oil in a thin steady stream, whisking constantly.
- Add the dressing to pasta along with the salmon, cucumber and chives. Toss mixture to coat well.
- Serve immediately.
