Carrot Marshmallow Salad
- 3 1/2 cups peeled, shredded carrots
- 1 cup miniature marshmallows
- 1/4 cup
pineapple, cut into 1/2-inch pieces
- 1 cup seedless raisins
- 1/2 cup shredded
- 1 cup mayonnaise
1 cup whipped cream
- Toss lightly carrots, marshmallows, pineapple, raisins and coconut.
- Combine mayonnaise with carrot mixture.
- Carefully fold in whipped cream.
- Garnish with additional coconut, if desired.
