Carrot Marshmallow Salad

Ingredients

  • 3 1/2 cups peeled, shredded carrots
  • 1 cup miniature marshmallows
  • 1/4 cup pineapple, cut into 1/2-inch pieces
  • 1 cup seedless raisins
  • 1/2 cup shredded coconut
  • 1 cup mayonnaise

1 cup whipped cream

Instructions

  1. Toss lightly carrots, marshmallows, pineapple, raisins and coconut.
  2. Combine mayonnaise with carrot mixture.
  3. Carefully fold in whipped cream.
  4. Garnish with additional coconut, if desired.
