Marinated Carrots


  • 2 pounds carrots, peeled and sliced
  • 1/2 medium bell pepper, diced
  • 1 medium onion, diced
  • 1 can tomato soup
  • 1/2 cup oil
  • 3/4 cup granulated sugar
  • 1/2 cup vinegar


  1. Cook carrots until fork tender.
  2. Drain; mix all ingredients.
  3. Chill overnight.
