Orange Vidalia Salad

Yield: 6 servings

Ingredients

  • 6 oranges, sliced or chunked
  • 2 to 3 tablespoons honey
  • 2 medium Vidalia onions, sliced
  • 1/2 clove garlic, crushed (may sauté in oil to soften)
  • 1 tablespoon celery seed
  • 6 tablespoons olive oil
  • 1 tablespoon basil
  • 3 tablespoons apple cider vinegar
  • 1 teaspoon oregano
  • Mixed salad greens

Instructions

  1. For dressing: Mix oil, cider vinegar, honey, garlic, celery seed, basil and oregano together. Pour over oranges and onions and mix well. Chill.
  2. Serve on mixed salad greens.

Notes

Blueberries, raspberries or melons can also be used with the Vidalia onions.
