Sweet-Sour Cucumbers with Onions



  • 2 cups thinly sliced, pared cucumbers
  • 1/2 teaspoon salt
  • 1 cup thinly sliced onions
  • 1/4 cup vinegar
  • 1 tablespoon water
  • 1 tablespoon granulated sugar
  • 1/2 teaspoon dill weed
  • 1/4 teaspoon cracked black pepper
  • Dash of ground red pepper


  1. Place cucumber slices in a bowl. Sprinkle with salt and cover with cold water.
  2. Refrigerate for 30 minutes; drain well.
  3. Add onions. Combine vinegar, the 1 tablespoon water, sugar, dill weed, cracked black pepper and red pepper. Pour over cucumbers and onions; toss lightly.
  4. Chill for 1 hour or longer, tossing occasionally, before serving.

Serves 4.
