Creamy Avocado Dressing

Ingredients

  • 1/2 cup ripe avocado
  • 3 tablespoons extra virgin olive oil
  • 3 tablespoons sour cream or yogurt (Greek or plain)
  • 2 tablespoons lemon juice
  • 1 garlic clove
  • 4 tablespoons water
  • 1/2 teaspoon kosher or sea salt
  • 1/4 teaspoon black pepper

Instructions

  1. Blenderize all ingredients until smooth.
  2. Adjust the salt, pepper, lemon and oil to taste, and use water to adjust thickness to make it pourable.
FLAVOR VARIATIONS

Southwestern
Use lime instead of lemon; add 1/4 cup cilantro leaves, 1 1/2 tablespoons chopped onion, 1/4 teaspoon cumin powder

Ranch
Add 1/4 teaspoon each dried dill, parsley, chives, onion powder, garlic powder, salt, black pepper, plus 1/2 teaspoon granulated sugar

Greek
Add 2 teaspoons dried oregano and an extra squeeze of lemon.

Italian
Add 1 1/2 teaspoons mixed dried Italian herbs
