  1. Cut cantaloupe and red pepper into 1/4-inch cubes.
  2. Combine with chiles, cilantro, vinegar and lime juice.
  3. Add sugar, if necessary.
  4. Let sit for 30 minutes in the refrigerator before serving.
  5. Use it the same day it is made.
