Marshmallows
Snowy white or colored marshmallows - it's your choice!
Ingredients
- 2 cups granulated sugar
- 3/4 cup water
- 2 tablespoons unflavored gelatine
- 1/2 cup cold water
- 1 teaspoon vanilla extract
- 1/2 teaspoon salt
- Cornstarch
- Confectioners' sugar
Instructions
- Mix granulated sugar with the 3/4 cup water. Simmer to soft-ball stage. Remove from heat.
- Soften gelatine in the 1/2 cup cold water. Place on a large platter. Pour hot syrup over softened gelatine. Stir until dissolved. Let stand until partially cooled.
- Whip until thick and white, and mixture will nearly hold its shape. If you are using food coloring, add at this point. Add vanilla extract and salt. Pour into straight-sided pans lined with equal parts of cornstarch and confectioners' sugar, mixed together. Let stand in cool place until firm (not in refrigerator).
- Cut into squares with scissors and dust with confectioners' sugar.
Variations:
Mint marshmallows: Whip in 1/2 teaspoon pure peppermint extract.
Rainbow marshmallows: Dye them any color you want with food coloring. I prefer paste food colors as they are more intense. Add a few drops or dabs until you achieve the color intensity desired.
