Avocado Aspic

Ingredients

  • 1 small box raspberry gelatin
  • 2 cups hot tomato juice
  • 1 tablespoon horseradish
  • 1 avocado, sliced

Instructions

  1. Dissolve gelatin in tomato juice.
  2. Add and mix in horseradish.
  3. Line bottom of 1-pint mold with avocado slices.
  4. Top with gelatin mixture.
  5. Refrigerate until set.

Yield: 4 servings
