Butternut Squash au Gratin

If you love potatoes au gratin, you will be delighted with this butternut squash version!

Butternut Squash au Gratin recipe

Ingredients

  • 1 large or 2 small to medium squash, peeled and sliced thin
  • 3 cups kale, chopped
  • 1 clove garlic, minced
  • 2 cups whole milk
  • 1 1/2 cups Parmesan cheese, grated, divided
  • 1/2 teaspoon salt
  • 1/2 teaspoon pepper
  • 1/2 teaspoon dried thyme
  • 1/4 teaspoon cayenne
  • 3 large eggs

Instructions

  1. Heat oven to 350 degrees F. Spray baking dish with cooking spray.
  2. Peel and slice squash about 1/8 of an inch thick.
  3. Chop kale and mince garlic.
  4. Mix together whole milk, 1 cup grated Parmesan cheese, seasonings, minced garlic and eggs.
  5. Layer the bottom of the prepared baking dish with slices of squash then kale. Pour on 1 cup of the cheese and egg mixture. Repeat the step.
  6. After the previous step is repeated, top the dish with one more layer of the cut squash and sprinkle with remaining 1/2 cup Parmesan cheese.
  7. Bake covered for 40 minutes.
  8. Remove the covering and bake for an additional 20 minutes.
  9. Serve immediately.
