Candy Corn

Ingredients

  • 4 carrots, cut into 1/4 inch slices
  • 1 large potato, cut into 1/4 inch slices
  • 4 ounces bacon, cut into 1/4 inch pieces
  • 1 tablespoon olive oil
  • 1 onion, chopped
  • 2 tablespoons maple syrup
  • 3 cups corn

Instructions

  1. Cook carrots and potatoes in boiling salted water until done; drain.
  2. Fry bacon until golden.
  3. Add olive oil to 1 tablespoon bacon drippings and cook onion for 10 minutes over medium low heat.
  4. Add maple syrup and cook for 5 minutes.
  5. Stir in corn, bacon, carrots and potatoes, and season to taste. Cook until warmed through.
