Gourmet Onions


  • 5 medium onions, sliced
  • 1/2 teaspoon granulated sugar
  • 1/2 teaspoon salt
  • 1/2 teaspoon ground black pepper
  • 1/3 cup butter or margarine
  • 1/2 cup dry sherry
  • 1/4 cup grated Parmesan cheese


  1. Combine onion, sugar, salt, and pepper; stir gently.
  2. Melt butter in a heavy skillet; add onion mixture, and cook, stirring frequently, 5 to 8 minutes.
  3. Stir in sherry, and cook an additional 2 to 3 minutes.
  4. Spoon into serving dish; sprinkle with cheese.

Yield: 6 servings
