Mashed Parsnips with Brown Sugar

Either lumpy or smoothly mashed, fresh parsnips prepared this way are distinctive and incredibly delicious.

Ingredients

  • 1 pound fresh parsnips, peeled and sliced
  • Butter (to taste)
  • Salt and pepper (to taste)
  • 1/4 cup brown sugar (or 1/4 cup maple syrup or honey)
  • 2 tablespoons finely minced parsley (optional)

Instructions

  1. Steam or boil parsnips in a saucepan in 1/2 cup of slightly salted water until each slice pierces easily. (Microwave in a microwave-safe covered container for 6 to 8 minutes for better flavor).
  2. Drain water.
  3. Add all remaining ingredients and stir and blend to desired consistency.
