Roasted Parmesan Asparagus
- 2 1/2 pounds fresh asparagus
- 2 tablespoons olive oil
- Salt and pepper
- 1/2 cup Parmesan cheese, grated
- Lemon wedges
- Heat oven to 400 degrees F.
- Break off tough ends of asparagus and place on a baking sheet.
- Drizzle with olive oil and sprinkle with salt and pepper.
- Bake for 15 - 20 minutes and then sprinkle
with cheese and bake for another minute until cheese melts.
- Serve with lemon wedges.
