Scalloped Sour Cream Potatoes

Ingredients

  • 1 can cream of mushroom soup
  • 1 cup sour cream
  • 2 cups shredded cheese, divided
  • 1/2 cup melted butter
  • 1/2 cup chopped scallions
  • 12 ounces frozen hash browns, thawed
  • 2 cups corn flake crumbs
  • 2 tablespoons butter

Instructions

  1. Grease a 9 x 13 inch pan.
  2. Combine cream of mushroom soup, sour cream, 1 cup cheese, 1/2 cup butter and scallions.
  3. Mix in hash browns.
  4. Top with remaining 1 cup cheese.
  5. Mix corn flake crumbs with the 2 tablespoons melted butter. Sprinkle over the cheese.
  6. Bake at 350 degrees F for 50 minutes.
