Spicy Black-Eyed Peas

This is an ideal dish to serve on New Year's Day.

Spicy Black-Eyed Peas

Yield: 6 servings

Ingredients

  • 3 or more slices bacon
  • 1 (17 ounce) can black-eyed peas
  • 1 (16 ounce) can diced tomatoes
  • 1 cup chopped onion
  • 1 large green bell pepper, chopped
  • 1 minced garlic clove
  • 1 teaspoon ground cumin
  • 1 teaspoon dry mustard
  • 1/2 teaspoon curry powder
  • 1/2 teaspoon chili powder
  • 1 teaspoon salt
  • 1/2 teaspoon pepper
  • Chopped fresh parsley
  • Hot cooked rice

Instructions

  1. Cook bacon until crisp. Remove and crumble; set aside.
  2. Stir remaining ingredients into bacon grease in skillet and cook. Bring to a boil. Reduce heat and simmer for 20 minutes, stirring occasionally.
  3. Pour mixture into serving dish.
  4. Sprinkle bacon and parsley over, if desired.
  5. Serve over rice.
