Sweet Potatoes with Raisins and Pecans

Note that this dish uses uncooked sweet potatoes, unlike many other sweet potato casseroles.

Ingredients

  • 5 sweet potatoes, peeled and cubed (or half rounds)
  • 2 ounces raisins
  • 2 ounces chopped pecans
  • 1/4 cup butter, melted
  • 1/2 cup maple syrup
  • 1/2 cup water

Instructions

  1. Heat oven to 400 degrees F (200 degrees C).
  2. Spread sweet potatoes in a single layer in a 9 x 13 inch baking dish. Sprinkle with raisins and chopped pecans.
  3. In a small bowl, mix the butter, maple syrup and water. Pour the mixture over potatoes. Cover the baking dish with aluminum foil.
  4. Bake for 50 to 60 minutes or until sweet potatoes are tender. Remove foil during the last 10 minutes to allow sugars to caramelize.
