Twice Baked Sweet Potatoes
Ingredients
- 8 medium sweet potatoes
- 1 cup miniature marshmallows
- 1/2 cup (1 stick) butter
- 1/2 cup chopped pecans
- 1/2 cup raisins
- Salt and pepper
Instructions
- Bake sweet potatoes until they are soft but not mushy.
- Cool and scoop out center, leaving enough potato to hold the shape of the skin.
- Mix potato with all other ingredients.
- Refill skins and bake for 30 minutes at 325 degrees F.
