Yukon Gold Scalloped Potatoes
Ingredients
- 5 pounds Yukon Gold potatoes
- 1 (3 pound) block Velveeta cheese, cut into small blocks
- 2 large Vidalia onions, finely chopped
- 1 pound bacon, fried and crumbled
- 1 quart (4 cups) Hellmann's mayonnaise
Instructions
- Bake Yukon Gold potatoes in foil, wrapped individually, at 400 degrees F for about 45 minutes.
- Leave in foil and let cool completely.
- Cut into squares.
- Mix all ingredients together and let set in refrigerator overnight.
- Bake at 350 degrees F until hot and bubbly and cheese is completely melted.
