Yukon Gold Scalloped Potatoes
5 pounds Yukon Gold potatoes
1 (3 pound) block Velveeta cheese, cut into small blocks
2 large Vidalia onions, finely chopped
1 pound bacon, fried and crumbled
1 quart Hellman's mayonnaise
Bake Yukon Gold potatoes in foil, wrapped individually, at 400 degrees F for about 45 minutes.
Leave in foil and let cool completely.
Cut into squares.
Mix all ingredients together and let set in refrigerator overnight.
Bake at 350 degrees F until hot and bubbly and cheese is completely melted.
