Yukon Gold Scalloped Potatoes



  • 5 pounds Yukon Gold potatoes
  • 1 (3 pound) block Velveeta cheese, cut into small blocks
  • 2 large Vidalia onions, finely chopped
  • 1 pound bacon, fried and crumbled
  • 1 quart Hellman's mayonnaise


  1. Bake Yukon Gold potatoes in foil, wrapped individually, at 400 degrees F for about 45 minutes.
  2. Leave in foil and let cool completely.
  3. Cut into squares.
  4. Mix all ingredients together and let set in refrigerator overnight.
  5. Bake at 350 degrees F until hot and bubbly and cheese is completely melted.
