Apricot Almond Granola Bars

Stop spending money on granola bars! Make them yourself with this easy DIY recipe! Wrap these delicious granola bars individually and pop them in the freezer for school lunches or quick snacks! These quick and easy granola bars are made with almond butter, apricots, and chopped almonds, but you can easily mix it up with a different nut butter and a variety of dried fruit and nuts!

Apricot Almond Granola Bars

Ingredients

  • 3 cups old fashioned oats
  • 3/4 cup all-purpose flour
  • 1 1/2 teaspoons ground cinnamon
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 cup packed light brown sugar
  • 1/2 cup almond butter
  • 1/4 cup (1/2 stick) unsalted butter (room temperature)
  • 2 eggs (room temperature)
  • 1 cup slivered almonds, toasted
  • 1/2 cup chopped dried apricots

Instructions

  1. Heat oven to 350 degrees F.
  2. Mix oats, flour, cinnamon, baking soda and salt in large bowl.
  3. Combine brown sugar, almond butter and butter in mixer bowl. Beat on medium speed until light and fluffy, about 3 minutes. Add eggs; beat until blended. Gradually Add oat mixture, beating on low speed just until blended. Stir in almonds and apricots. Spread in greased 13 x 9 inch baking pan.
  4. Bake until a wooden pick inserted in center comes out clean, 20 to 25 minutes.
  5. Cool completely in pan on wire rack.
  6. Cut into 24 bars, about 3 x 1 1/2 inches each.

Prep: 15 min | Bake: 20 to 25 min | Servings: 24 bars

Notes

Substitute dried cherries or cranberries for apricots.

No almond butter? Substitute creamy peanut butter.
