Quick Pea Soup

Yield: 3 to 4 servings

Ingredients

  • 1 (16 ounce) can green peas
  • 1 cup light cream or Half-and-Half
  • 1/2 small onion
  • 1 carrot
  • 2 tablespoons butter
  • 1/4 teaspoon salt
  • Pepper to taste

Instructions

  1. Heat peas and cream together. Empty into blender.
  2. Add onion, carrot, butter and salt and pepper. Blend until smooth.
  3. Pour back into saucepan and heat thoroughly.
