Corn Meal Dumplings

  • 1 cup cornmeal
  • 1/4 cup all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 2 eggs
  • 1/2 cup milk
  • 1 tablespoon melted butter


  1. Sift dry ingredients together.
  2. Beat eggs and milk together.
  3. Stir in dry ingredients.
  4. Add melted butter.
  5. Drop from a spoon over boiled greens or into heated stock. Simmer, covered, for 15 minutes.
