Potato Dumplings are great with the brown stuff from the bottom of the roaster!
- 1 cup mashed seasoned potato
- 1 egg
- 1/2 teaspoon salt
- 1 cup all-purpose flour (or 1/2 more)
- 1/4 cup Cream of Wheat
- Mix all ingredients in a bowl, then knead a little on a board. Roll into a roll about 3 or 4 inches across. Cut off about 1 or 2 inches, and roll that into an oblong dumpling about 6 inches long and 1 or 2 inches across.
- Drop the dumplings into boiling water for about 20 minutes (covered).
