Tortellini Soup



  • 1 pound pork sausage or Italian sausage
  • 1 onion, chopped
  • 4 cans beef broth
  • 1 green bell pepper, chopped
  • 2 large carrots, sliced
  • 1 clove garlic, minced
  • 2 zucchinis, sliced
  • 1 bag frozen cheese tortellini
  • 1 can spaghetti sauce
  • Parmesan cheese
  • Parsley, to taste
  • Salt, to taste
  • Pepper, to taste
  • Basil, to taste


  1. Brown the sausage in the soup pot. Drain well and set aside.
  2. Cook tortellini and set aside.
  3. Put everything into the soup pot except for the tortellini and sauce. Cook to a slow boil. Add sausage when the slow boil begins. Add tortellini right before serving; otherwise it can soak up liquid and lose its shape.
  4. Serve with freshly grated parmesan cheese.
