Tortellini Soup
Ingredients
- 1 pound pork sausage or Italian sausage
- 1 onion, chopped
- 4 cans beef broth
- 1 green bell pepper, chopped
- 2 large carrots, sliced
- 1 clove garlic, minced
- 2 zucchinis, sliced
- 1 bag frozen cheese tortellini
- 1 can spaghetti sauce
- Parmesan cheese
- Parsley, to taste
- Salt, to taste
- Pepper, to taste
- Basil, to taste
Instructions
- Brown the sausage in the soup pot. Drain well and set aside.
- Cook tortellini and set aside.
- Put everything into the soup pot except for the tortellini and sauce. Cook to a slow boil. Add sausage when the slow boil begins. Add tortellini right before serving; otherwise it can soak up liquid and lose its shape.
- Serve with freshly grated parmesan cheese.
